Steve Ellis had just graduated from the Culinary Institute of America and was working as a line cook in San Francisco when he took notice of a trend that would prove vital to his future. The taco and burrito establishments in San Francisco’s Mission district were doing extremely brisk business and were always popular with the locals. He paid particular attention to what they were doing and how and moved to Denver, CO to open the first Chipotle Mexican Grill. All he started with was an $84,000 loan from his father, a target sales number of 107 burritos a day, and his education.
His business model worked so well that he more than exceeded that number, topping over 1000 burritos a day, enough to allow him to open a second location, and a third with the use of an SBA loan. So impressed was his father with the business’s progress that he invested an additional $1.5 million into its growth. 24 years later Chipotle Mexican Grill is a household name with profits of more than $400 million a year.
